Last night, was spent at the local high school, watching the final freshman football game of the season. The air was chilly, to say the least and by the time we got home, we were famished. Thankfully, I had this recipe for Tamale Pie by Sandra Lee already bookmarked. I just substituted Vegetarian Tamales for Chicken but opted for Turkey chili, to add extra protein. Also, this recipe is a great one, if you like to “sneak” extra nutrients into your dishes. Flax-seed or pureed veggies would hide perfectly in the chili.
1 Box of Rice A Roni Creamy Four Cheese Rice
1 Bag of Vegetarian Tamales
1 Can of Turkey Chili with Beans
1 Cup Shredded Pepper Jack Cheese
1/4 Cup Salsa Verde
1 Cup Shredded iceberg Lettuce
3 Tablespoons Chopped Green Onions
Preheat oven to 400 degrees. Spray 9 inch pie plate with cooking spray. Prepare rice according to package directions. Prepare tamales according to package directions. Layer rice, tamales, chili and cheese in prepared pie plate. Bake for 10 mins or until cheese is melted. Top with salsa, shredded lettuce and green onion.
