{Orange Beef}

My kids are huge fans of Orange Chicken, so last night I decided to try a new recipe out of Jessica Seinfeld‘s latest cookbook, do it Delicious for Orange Beef.  It was a healthier alternative and though I was skeptical of what the kids would think – they loved it!  The recipe calls for sweet potato puree, but to speed things up, I simply substituted it for baby food.   


1 1/2 lbs of beef filet

1/4 cup cornstarch, plus 1 teaspoon

1/2 teaspoon pepper

for sauce~

2 tablespoons canola oil

2 tablespoons soy sauce

1/2 cup orange juice

zest of 1 orange

1/4 cup warm water

1/2 cup sweet potato puree

1 tablespoon light brown sugar

1 teaspoon grated ginger

1 teaspoon hot chili paste

2 medium carrots(sliced)

2 cups broccoli florets

1 tablespoon canola oil

1/4 cup chopped scallions


1. Coat the beef with 1/4 cup of cornstarch and the pepper in a large bowl. Heat 2 tablespoons of canola oil on high in a wok or saute’ pan and carefully add the meat.  Cook until golden brown and crispy, about 7-8 mins, stirring once or twice.  Transfer to paper towels to drain excess fat.

2. In a separate bowl, combine the soy sauce, orange juice, zest, water, sweet potato puree, brown sugar, ginger, chili paste and the remaining cornstarch and mix until smooth.

3. In a clean saute’ pan, saute’ the carrots and broccoli in 1 tablespoon of the oil for 1 to 2 mins.  Push the carrots off to the side add the soy sauce mixture and bring the sauce to a boil.  Then add the beef to the pan and coat with the sauce.  Cook 1 to 2 minutes more, until the sauce thickens. Garnish with scallions.  I served with brown rice and green salad.
